Sierra Morena is a family-run farm led by Wilson Alba Córdoba, who took over the reins from his grandparents 15 years ago. The Alba family originally grew dragonfruit and grenadine, and while they still run a thriving Hass avocado operation, coffee is now the heart of the farm.
The property spans 40 hectares in total, with 10 hectares dedicated to specialty coffee. Wilson cultivates unique varieties like pink bourbon, tabi, gesha, pacamara, and chiroso—many of which thrive under the shade of mandarin trees, creating a cooler and more stable environment for slow, even ripening.
Processing at Sierra Morena is hands-on and precise. Ripe cherries are floated and rested for 12 hours, then depulped and left to ferment in tanks for 48 to 60 hours, depending on the weather. After that, the coffee is carefully washed and dried for 20 to 25 days, resulting in a clean, complex cup that reflects the farm’s commitment to quality.
