Project One Light (POL) is a specialty coffee processor based in Yunnan, founded in 2021 by Olina Cai. With a team of Q-graders and coffee experts, POL focuses on ethical sourcing, quality control, and sustainable practices to elevate Yunnan coffee. Their mission is to consistently improve coffee quality while sharing their journey with the global community.
POL’s team believes special processing enhances the beans’ natural qualities. They carefully select ripe cherries from high-altitude regions in Mangshi, Dehong, known for exceptional coffee. Precision is key: they control temperature and humidity in anaerobic fermentation vessels to bring out complex flavors. Afterward, beans are sun-dried over two weeks, allowing time, sunlight, and nature to create a unique taste profile. Thus presenting Blue Iris
