POL’s team believes special processing enhances the beans’ natural qualities. They carefully select ripe cherries from high-altitude regions in Mangshi, Dehong, known for exceptional coffee. Precision is key: they control temperature and humidity in anaerobic fermentation vessels to bring out complex flavors.
